Have you tried our chicken in mole filling yet? It’s perfect for enchiladas! Recipe below👇

CHICKEN MOLE ENCHILADAS:
1) Preheat oven to 350 degrees. In a small saucepan, empty packet and heat on medium-low. When it boils, turn the heat down and simmer.
2) In a large pan, pour vegetable or sunflower oil to about 1/2 cm in height and heat on medium setting. Once the oil is hot, cook six tortillas, one at a time, just enough to soften them - about 3-5 seconds each.
3) Using a spoon, scoop chicken out of the mole and divide it evenly among the tortillas. Roll each one up arrange them snugly in one layer in a large baking dish, seam side down.
4) Drizzle the warm mole on top. Top with shredded cheese. Cover with a lid or foil and bake for approx. 20 minutes or until the cheese starts to melt. Uncover and broil for 2 - 3 minutes, until the cheese is golden brown.
5) Remove from heat, top with creama fresca, onion, avocado or your favourite toppings and enjoy!

We’ve offered two versions here: one with a chicken filling and a vegetarian version that is easily made vegan by subbing with plant-based cheese and cream. Did you know that eating a meal full of different colours (the natural fruit and veggie kind, not multicoloured sprinkles 🧁) is one of the best ways to ensure you’re getting a variety of essential nutrients?

On the blog today: this delicious Healthy Mexican Bowl with Salsa. It’s vegan, gluten-free and full of colour! Containing brown rice, black beans, spinach, tomatoes, yellow pepper, avocado, smoked tofu and salsa (I used my favourite @solecitofoods salsa, but you could use any), it’s the perfect simple meal prep recipe for your weekday lunches.

Simply make a big batch in individual food containers and refrigerate until needed. I’ve found I actually look forward to my packed packed lunches when there’s this much colour in them. 🌈 Happy eating!

Alright amigos, let’s talk packaging 🤓 Now get ready because we have a lot to say on this topic so it's a long one!

As you may have noticed, we recently changed our salsa packaging to BIGGER containers! We did this for two main reasons:
1) we heard you when you told us our containers were too small for your salsa needs
2) packaging is expensive! It's one of the most expensive aspects of making our product for sale at markets. So by having bigger containers, you get more bang for your buck!

There is one thing we want to address though: we really wish we had an alternative to plastic packaging. We try to be as environmentally responsible as we can be in all our business (and personal!) practices ♻️ Unfortunately, we have yet to find the ideal, environmentally-friendly packaging option:
• Glass is very costly. Ultimately that would make the price of our products go up and that cost would be transferred to you, the end consumer. We don't want to do that to you -- we know how expensive it is to live in this city already!
• Compostable packaging comes with some complications: we haven't found a supplier who can provide us with an option that would work for our products while also meeting the required health regulations. Also, even though compostable packaging is a step in the right direction, most of those packages still end up in the dump right now since they currently cannot be properly composted by most municipalities.

So, amigos, as you can tell we're faced with a dilemma when it comes to how we get our products to you. However, we're glad to be part of a community that is stepping up to find solutions! For example, we're excited to announce we recently started working with the lovely folks at @thesoapdispensary! You can visit them on Main St. and bring your own refillable containers to stock up on your favourite Solecito salsas and corn tortillas 🙌

We know things aren't perfect but we're hoping that by making constant changes in the right direction we'll make the world a cleaner and better place for all 🌎 In the meantime, please remember to reduce, reuse and recycle all that you can!
