Slow Cooker Chicken or Tofu in Salsa

Ingredients
- 1 cup of Solecito salsa
- 1.5 lb skinless, boneless chicken OR 1 blocks firm tofu, diced
- 1/2 lb mini potatoes
- 1/2 cup green beans, chopped
- 1/2 cup of chicken or vegetable broth
- Rice (for serving)
Instructions
- Combine the salsa, chicken or tofu, potatoes, green beans and broth into the crock of a slow cooker.
- Cook on low, 6 to 8 hours. If using chicken, shred it with two forks.
- Serve with a side of rice.
